Chocolate-covered Spiders

On Monday, for Tuesday's YAB meeting, I made a batch of the deliciously gruesome-looking chocolate-covered spiders. Now, they're not actually spiders (although don't tell the other librarians that!), but they look creepy and they taste great. And since they're so easy to make I thought I'd share the recipe with all of you. Just in time for Halloween!

What you'll need:
1 package (11-12 oz) of milk or semi-sweet chocolate chips
1/2 bag, or one small can, chow mein noodles
1 1/2-2 c. lightly salted peanuts (the actual amount is a matter of personal preference)

1. Put chocolate chips in a microwave-safe bowl. Heat them on medium-high (about 70%) for 1 minute. Stir thoroughly. If the chips are not completely melted then heat for 10-15 seconds more and stir again. Repeat, if necessary. [Note: Do not overcook the chocolate, it will get gross. If there are still a few lumps, just keep stirring. The chocolate will eventually even out]

2. Pour in chow mein noodles and stir until completely coated in chocolate. Do the same for the peanuts.

3. Drop "spiders" by the spoonful onto wax or parchment paper and let them cool. Once the chocolate has set (about half an hour to an hour) they're ready to enjoy!
